Snow Goose Gumbo Recipe - A Cajun Tradition

Have you recently been on a goose hunt and ended up with a handful of snow geese? Finding the right thing to cook can be difficult, but we highly recommend this Louisiana tradition of snow goose gumbo! If you don’t typically have cajun food in your normal diet, this dish can be an excellent way to mix up your creativity in the kitchen.
Below we have listed out all the needed ingredients and steps to take to make the delicious snow goose gumbo!
Ingredients:
1 pound of freshly harvested snow goose meat
1 cup of vegetable oil
1 cup of flour
2 large onions, diced
3 stalks of celery, diced
1 green bell pepper, diced
4 cloves of garlic, minced
1 tablespoon of Cajun seasoning
1 teaspoon of paprika
1 teaspoon of thyme
1 bay leaf
6 cups of chicken broth
2 cups of water
1 pound of Andouille sausage, sliced
1 cup of uncooked white rice
Salt and pepper, to taste
Chopped green onions, for garnish
Instructions:
Cut the snow goose meat into bite-sized pieces.
Heat the vegetable oil in a large pot over medium heat.
Add the flour and stir constantly until the mixture turns a deep golden brown, about 10 minutes. This is called a roux and it will be the base for our gumbo.
Add the onions, celery, bell pepper, and garlic to the pot and cook until the vegetables are soft, about 5 minutes.
Stir in the Cajun seasoning, paprika, thyme, and bay leaf and cook for an additional minute.
Pour in the chicken broth and water and bring the mixture to a boil.
Add the snow goose meat and Andouille sausage to the pot and reduce the heat to low.
Simmer for about 1 hour, or until the meat is tender.
After an hour, add the uncooked rice to the pot and continue cooking until the rice is cooked through, about 20 minutes.
Season the gumbo with salt and pepper, to taste.
To serve, ladle the gumbo into bowls and garnish with chopped green onions. Enjoy!
