 Ingredients:

  • 4 wild snow goose steaks (about 1 inch thick)

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon butter

  • 2 cloves garlic, minced

  • 2 sprigs fresh rosemary 

Instructions:

  1. Preheat your grill to high heat.

  2. Rub the steaks with olive oil and season with salt and pepper on both sides.

  3. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or longer if you prefer your steaks more well-done.

  4. While the steaks are cooking, melt the butter in a small saucepan over medium heat. 

  5. Add the minced garlic and rosemary and cook for a few minutes until the garlic is fragrant.

  6. Brush the garlic-rosemary butter over the steaks during the last minute of cooking.

  7. Remove the steaks from the grill and let them rest for a few minutes before serving.

 These steaks are perfect for a special occasion, such as a dinner party or a romantic date night. They can be served with a variety of side dishes, such as grilled vegetables, mashed potatoes, or a salad.
